Day 2:

- Breakfast: Spam and cheese omelette with whole wheat toast

Ingredients:

- 4 large eggs

- 1 can of Spam, sliced

- 1 cup shredded cheese (cheddar or your preferred cheese)

- 2 slices of whole wheat bread

- 2 tablespoons butter

- Salt and pepper to taste

- Optional toppings: diced onions, bell peppers, mushrooms, or any other vegetables you like

Instructions:

1. In a bowl, beat the eggs and season with salt and pepper. Set aside.

2. Heat a large non-stick pan over medium heat and melt 1 tablespoon of butter.

3. Add the sliced Spam to the pan and cook until browned and slightly crispy on both sides.

4. Once the Spam is cooked, remove it from the pan and set aside.

5. In the same pan, melt the remaining tablespoon of butter.

6. If desired, add any optional toppings to the pan and sauté them until tender.

7. Pour the beaten eggs into the pan and let them cook undisturbed for about 1-2 minutes, until the edges start to set.

8. Gently lift the cooked edges of the omelette with a spatula and tilt the pan, allowing the uncooked eggs to move to the edges and cook.

9. When the top of the omelette is mostly set but still slightly runny, sprinkle the cooked Spam and shredded cheese over one half of the omelette.

10. Use the spatula to carefully fold the other half of the omelette over the fillings, creating a half-moon shape.

11. Cook for another 1-2 minutes until the cheese is melted and the omelette is cooked through.

12. While the omelette is cooking, toast the whole wheat bread slices until golden brown.

13. Serve the Spam and cheese omelette with the toasted whole wheat bread on the side.

- Lunch: Spam and pineapple kebabs with a side salad

Preparation time: 15 minutes

Cooking time: 10 minutes

Total time: 25 minutes

Ingredients:

For the kebabs:

- 1 can of Spam, cubed

- 1 cup pineapple chunks

- 1 red bell pepper, seeded and cut into squares

- 1 green bell pepper, seeded and cut into squares

- 1 red onion, cut into squares

- 2 tablespoons soy sauce

- 2 tablespoons sesame oil

- 1 tablespoon honey

- 1 tablespoon lime juice

- Wooden skewers, soaked in water for 30 minutes to prevent burning

For the side salad:

- 4 cups mixed salad greens

- 1 cucumber, sliced

- 1 cup cherry tomatoes, halved

- ½ cup feta cheese, crumbled

- ¼ cup red onion, thinly sliced

- 2 tablespoons olive oil

- 2 tablespoons balsamic vinegar

- Salt and pepper to taste

Instructions:

1. Preheat your grill to medium-high heat. If using an oven, preheat it to 400°F (200°C).

2. In a bowl,combine the soy sauce, sesame oil, honey, and lime juice. Mix well to create the marinade.

3. Add the cubed Spam, pineapple chunks, bell peppers, and red onion to the marinade. Toss until all the ingredients are well coated. Let it marinate for about 10 minutes.

4. Thread the marinated Spam, pineapple, bell peppers, and red onion onto the soaked wooden skewers, alternating between ingredients. This will create the kebabs.

5. Place the kebabs on the grill or in the oven and cook for approximately 4-5 minutes on each side, or until the Spam is slightly browned and the vegetables are tender.
